This recipe came to me after years of search , it is not mine and I dont know who owns it
Years ago a sweet friend of mine was searching for this recipe , I looked high and low in my search ,but by the time I found it she had passed away .It was on What Cake Is Named After Your State -Taste Of Home Community.She said she had originally found it in a newspaper but the post said it was from a blue economics book. So, in honor of Gail here it is for all to enjoy.

Alabama Pecan Cake with Sea Foaming Icing
½ cup shortening
1 cup water
4 sq. chocolate unsweetened
2 cups sugar
2 eggs
2 cups flour
1 teaspoon salt
2 teaspoons baking powder
½ teaspoon baking soda
2 teaspoons vanilla
½ cup buttermilk
Put shortening,water and chocolate in the top of a double boiler,Heat until the chocolate is melted. Add the sugar . Mix well and cool When cool add the eggs and beat well . Combine the dry ingredients and add to the first mixture.Beat well add Vanilla and milk and beat well again.              Pour batter into 2 greased 9 inch layer pans, Bake 25 to 30 minutes in a 350 degree oven
Pecan Filling
1 teaspoon cornstarch
⅓ cup sugar
2 tablespoons butter
3 egg yolks,beaten
⅔ cups milk
¼ teaspoon salt
½ teaspoon vamilla
1 cup chopped pecans.
Combine cornstarch and sugar. Cream together with butter. Add well beaten egg yolks and milk . Pour in double boiler and cook until mixture thickens.Add salt and vanilla.Cool and add pecans.Spread between layers of cake.
Sea Foam Icing
¾ cup brown sugar
3/4 cup sugar
⅓ cup hot water
¼ teaspoon cream of tartar
3 egg whites
Combine sugars, water and cream of tartar in pan and cover ,slowly bring to a simmering stage.Uncover and cook until the syrup spins a long thread (250-255 degrees)
Remove from heat. Beat three egg whites until stiff. When the syrup has stopped bubbling, pour it over the egg whites, beating continuously until the mixture holds its shape
Use to frost cake
